Running rough/hesitating in 110-degree heat

So I'm typing this on my phone sitting 750 miles from home. Hoping someone can give me a little advise so I feel better about driving home! My mada is an 05 with 115k on it. All maintenance has been done. Here's what happened:

Driving from Anaheim to Phoenix, average temp of about 105. Driving a consistent 80-90, car is loaded with my 6 and all our luggage for 10 days. After coming over the first big pass after the Arizona border, I was cruising at 80 when I pushed the gas a bit to pass a truck. The car wouldn't down shift, the tach was jumping around between 2500 and 3500, and the motor felt like it was missing. I backed off, settled at 80 and everything was fine. Few miles later I had slowed to 70 behind a big rig. Pushed the gas to accelerate and got the same reaction from the car. Felt like a miss to me. Just felt like the engine was hesitating. Eventually got back to 80. Again few miles later same thing, and this time I could not get my seed back. Bad hesitating, tach jumping around. I pulled over on an off ramp, left the car running, and did a quick visual inspection of the whole car. Nothing out of the ordinary. Got back in, hit the on ramp, used the shifted to run thru the gears, and everything was fine. Rest of the way to Phoenix car ran fine. During this whole fiasco all gauges stayed in their normal positions and I got no idiot lights. I dont have the trans temp gauge so I don't know what the temp was but the idiot light never came on. I was thinking trgans problem, but the way it went away after simply pulling over for 3-4 minutes, then never came back, I really don't think it was trans. And it wasn't slipping because it never reved freely like it would with a slip. Anyways, it seems to be OK now, but I've got a 750 mile trip home on Wednesday, and I'm looking for a little peace of mind.

Sorry for the long post. Anyone have a similar experience, or any advice on things I should check before heading home??
